Homemade strawberry danishes
I found this recipe last week, and was super anxious to try it. Troy has training a few towns over and he is carpooling with a van full of guys with voracious appetites. They are the perfect guinea pigs for new recipes.
These danish should be filed under “looks super complicated, but are STUPIDLY easy”. One of the best things about this recipe is that the only real sweetener is the filling you choose and maybe a sprinkling of raw sugar on top. Compare this to a sickeningly sweet pastry from the grocery store, and this almost can convince you it’s healthy. Almost.
NOLA Mommy’s Danish (adaptations by Sarah)
2 cups of whole wheat flour (if grinding your own, use “soft white”)
2 tblsp vital wheat gluten
1/2 tsp salt
1 tsp cream of tartar
1 tsp baking powder
Evaporated cane juice (organic whole(er) sugar you can get at Costco)
1/2 cup cold butter
3 tblsp cream cheese
3/4 cup milk + 1 tblsp
1 cup of jam or preserves of your choice
1) Preheat oven to 400 degrees. Line baking sheet with parchment paper.
2) In a mixer, shift together flour, salt, cream of tartar, and baking powder.
3) Cut the butter and cream cheese in to the flour until it resembles coarse sand.
4) Slowly add the milk. Mix until just combined.
5) Turn dough on to a lightly floured surface, and knead in to a ball.
6) Roll dough into a rectangle that is approximately 12×8.
7) Transfer to the baking sheet lined with parchment.
8) Spread your filling in the middle third of the dough.
9) Using a pizza cutter, cut 1 inch lines on each side of the filling, and fold the strips over the filling and over themselves.
10) Brush with milk, and then sprinkle with evaporated cane juice.
11) Bake for 25-30 min (my oven sucks, so this took 35 for me), or until golden brown. The directions say to allow to cool before cutting, and surely somewhere people must follow those directions. But I’m not one of those people.
