1 cup milk, 1 tbsp water, 1 cup all-purpose flour, 1/4 tsp salt, 3 tbsp melted butter, 2 eggs
Blend on medium for 5 seconds, then scrape the sides and blend for another 5 seconds. Avoid over-mixing.
{optional for best results} Allow batter to rest for 30 minutes at room temperature or up to 48 hours covered in the fridge.
Grate cheese, mix pizza sauce, and chop any large ingredients.
Preheat pan over medium heat.
Lightly butter pan, and pour 1/4 cup of batter into the center of the pan.
butter for pan
Quickly remove the pan from the burner and gently rotate it to evenly distribute the batter around the pan.
Return pan to heat and cook until the edge of the crepe looks dry and lift up from the edge of the pan (~1 minute).
Using a silicone spatula, gently flip the crepe and cook for another 30-60 seconds.
Remove crepe from pan onto a plate. You can stack crepes until they are all cooked.
Assembling the Savory Crepes
Spoon 1 tsp of pizza sauce onto the left 1/3 of the crepe. Sprinkle with 2 tbsp shredded cheese. Add any additional toppings. Any meat must be fully-cooked.
1/2 cup mozzarella cheese, 1/4 cup pizza sauce, any additional toppings
Gently roll or fold the crepes to secure the fillings. Repeat until all crepes are assembled.
Heat pan over medium heat, and lightly butter.
Place crepe on the pan and cook until the bottom is lightly browned (~2 minutes). Flip and cook until the other side is lightly browned.
Serve warm.
Notes
If you don't have a blender, mix thoroughly by hand with a whisk.
