Instructions
Preheat the oven to 425F. Place the pizza pan in the oven while it preheats.
In a small mixing bowl, combine tomatoes, garlic, Italian seasoning, kosher salt, and baking soda. Mix until thoroughly combined.
3/4 cup canned crushed tomatoes,
1 clove garlic,
1 tsp dry Italian seasoning,
1/2 tsp kosher salt,
1/8 tsp baking soda
Spread half of the sauce on each of the flatbreads.
2 flatbreads
Top each flatbread with half of the shredded mozzarella and then half of the fresh mozzarella. Top both with shredded basil.
1 cup shredded mozzarella cheese,
1 cup fresh mozzarella cheese,
12 basil leaves
Carefully transfer the flatbread pizzas onto the hot pizza pan.
Bake at 425F for 7 minutes, or until the cheese is melty and lightly browned.
Optional:
top the finished pizza with additional fresh basil.
Notes
The baking soda will cause the tomatoes to foam a bit, but the bubbles will dissipate as it sits.
You will not need to sprinkle cornmeal on the pizza stone before placing the flatbread on it. The flatbreads are prebaked and won't stick to the pan.
Optional: brush the edges of the crust of the finished pizza with a bit of olive oil and a sprinkling of garlic salt before serving.
Italian Seasoning:
1/4 tsp dried parsley, 1/8 tsp dried oregano, 1/4 tsp dried basil, 1/8 tsp dried tarragon, 1/4 onion powder, (optional) pinch of red pepper flakes.
