Place the wire rack/trivet in the Instant Pot and add water. Wad up a piece of foil and place it in on the trivet to divide the pot in half.
Scrub sweet potatoes and stack on one half of the foil (no need to poke holes. See recipe notes below). Add your chicken breast to the other half. Put the lid on, set to sealing. Manual>high pressure>18 minutes. Allow for a 10-minute natural release and then do a quick release to remove any additional pressure.
While the Instant Pot is doing its thang, mix the ingredients for the Greek yogurt sauce.
Remove the chicken from the pot and shred. Add remaining herbs. Set aside.
Make a small top slice in the sweet potatoes that will create a pocket for the rest of the ingredients. Try your best to not cut it all the way through.
Layer: spinach, chicken, and then feta. Optional: put it under a low broiler on the second highest rack of your oven for 3 minutes. This makes the feta toasty and warm. Top with Greek yogurt sauce and serve.
Oven Baking Directions
Preheat your oven to 375 degrees. Put one rack on the second highest setting. Place a large baking sheet covered with foil under the top rack. Scrub the sweet potatoes, pat dry, and pierce multiple times all over with a fork. Put 1 tbsp of olive oil and the kosher salt in a large bowl.
Place two potatoes in the bowl, and swirl until the potatoes are covered with olive oil and salt. Place directly on the top rack. Repeat with the other two potatoes. Make sure the foil-lined baking sheet is completely covering the surface area directly under the spuds. Cook until a knife can easily pierce through, about 1 hour.
Meanwhile, simmer your chicken breasts in a pot of water on the stove until cooked through, about 25 minutes.
Mix the ingredients for the Greek yogurt sauce.

Make sure the sweet potatoes are not touching the water or it makes them mushy on the bottom.The cooking time for just one sweet potato is the same. Cooking time for a butt ton of sweet potatoes is the same.No need to poke holes in the sweet potato prior to cooking in the Instant Pot. Sorry, you'll need to find another way to get your aggression out.
