No Bake Lactation Cookies {Gluten Free Lactation Cookies}

In a food processor, pulse dates 10 times. Add the oats, brewers yeast, flax seed, and cocoa powder, and pulse to combine. Add the cashews, and pulse a few times depending on how chunky you want the cashews (I like them chunky).
In a large microwave-safe bowl, combine peanut butter, honey, coconut oil, brown rice syrup/Lyle's Golden Syrup, and vanilla, and microwave it for 1 minute. Stir to combine.
Add the dry ingredients from the food processor to the peanut butter mixture, and stir to combine.
Add the crisp rice cereal, and stir. Let everything cool for a few minutes, then add the mini chocolate chips, and stir to combine.
Make small "pancakes" or balls out of the mixture, and place on a parchment-lined baking sheet. Refrigerate until solid.
No Food Processor Instructions
Chop dates and cashews with a sharp knife (or leave out completely).

Add oats, brewers yeast, flax seed, cocoa powder, dates, and cashews and stir to combine. It is ok if they're not chopped. The texture will change but they'll still be delicious.

Notes
The oats you use will be uncooked. I prefer old-fashioned oats but quick-cooking (aka instant) will work too.To make these healthy lactation cookies vegan, replace the honey with pure maple syrup or Lyle's Golden Syrup. Lyle's Golden Syrup is a magical elixir that tastes like if maple syrup had sex with a stick of butter. You'll want to make sure the chocolate chips are dairy-free (like Enjoy Life).
