A healthy and comforting Paleo Chicken Pot Pie Soup that is easy to make in the Instant Pot. This delicious soup is gluten-free, dairy-free, and Whole30 adaptable.
Add all the veg, except the green beans to your Instant Pot.
In a separate bowl mix the arrowroot with the chicken and then dump that into the Instant Pot too.
Add in the dry seasonings, and pour the chicken stock over everything. Pro tip: the liquid will NOT cover all the veg and chicken. It's going to be ok; just trust me on this! Make sure the vent is set to "sealing" and then press manual>high pressure>6 minutes.
When the Instant Pot beeps, use a clean kitchen towel and flip the vent to "venting" (this is called a quick release). When the vent drops, open the lid, add in the Nut Pods/milk, and the frozen green beans. Stir and put the lid back on for 2 minutes (no need to switch the vent or anything).
Add all the veg, except the green beans to your slow cooker.
In a separate bowl mix the arrowroot with the chicken and then dump that into the slow cooker too.
Add in the dry seasonings, and pour the chicken stock over everything. Put the lid on and set it to 6 hours on low.
When everything is cooked, add in the Nut Pods/milk and frozen green beans. Put the lid back on and cook for another 15 minutes.
