Combine dry ingredients in a large bowl and whisk until mixed. Mix wet ingredients in a separate bowl and whisk until well combined.
Make a well in the dry ingredients, and add the wet ingredients, and stir just a few times. There may still be some lumps. That’s ok. Set aside for at least 10 minutes and preheat your waffle iron.
Lightly spray the hot waffle iron with olive oil spray and pour batter into the waffle maker (See your manual because each model will recommend a different amount) until cooked through.
Notes
For the fluffiest waffles, don't overmix the batter!No whole wheat flour? Use the same amount of all-purpose flour and leave out the vital wheat gluten.Leave the batter in the fridge overnight if you'd like to make the waffles fresh in the morning.
