Slice chicken breast against the grain and place in a mixing bowl with fajitas seasoning and 2 tsp of olive oil. Stir to combine. (Marinate for up to 24 hours in the fridge).
Brush olive oil on the basket of the air fryer. Add seasoned chicken. Set mixing bowl aside.
Set the air fryer to 400F degrees and cook for 5 minutes.
Meanwhile, add sliced onions and peppers to the now-empty mixing bowl, and add 1 tsp olive oil. Stir to coat veggies in oil, removing any fajitas seasoning from the sides.
1 cup onions, 1 cup peppers
Add onions and peppers to the air fryer, and stir the chicken to redistribute.
Cook for an additional 8 minutes, or until a meat thermometer registers 165F degrees when inserted into the thickest strip of chicken.
Notes
Try to cut the chicken to a uniform size to get even cooking results.
If you want to prep the onions and peppers to marinate with the chicken, cut them slightly larger than normal to prevent burning during the longer cooking time.
