Instructions
Freezing Minced Ginger
(optional) Peel ginger with a spoon, vegetable peeler, or sharp knife.
Using a sharp knife, mince the ginger to uniform pieces. If you have a food processor, you can "pulse" the ginger to quickly chop everything.
Transfer minced ginger to a bowl, and add water a teaspoon at a time until it creates a "paste".
Spoon ginger paste into mini muffin tins lined with muffin papers, filling them three-fourths full.
Freeze for 2-3 hours, and then remove the muffin liners from the pan and freeze each "puck" in an air-tight container for up to 6 months.
Freezing Whole Ginger
Place clean ginger in a freeze-proof bag, removing any excess air.
Store in an air-tight container for up to 6 months.
Freezing Sliced Ginger
(optional) Peel ginger with a spoon, vegetable peeler, or sharp knife.
Slice ginger into desired width.
Freeze on a parchment-lined baking sheet for 2 hours and then transfer to freezer storage.
Notes
Will keep in the freeze for 6 months.
