Blueberry Compote
You're going to love this homemade blueberry compote! Made with just three ingredients, this fresh blueberry fruit compote is the perfect topping for ice cream, yogurt, or waffles.

Ingredients

cups
blueberries
(~24 oz)

tbsp
white sugar

tbsp
water
{+ more as needed}

lemon juice
1
tsp
lemon zest
Instructions
In a heavy-bottomed saucepan, add all ingredients. Stir to combine.
2 tbsp white sugar,
2 tbsp water,
1 tsp lemon juice,
1 tsp lemon zest,
5 cups blueberries
Bring mixture to a boil over medium-high for 1 minute, stirring constantly.
Reduce temperature to medium and allow the mixture to simmer until softened and reduced (~25-30 minutes), stirring often so that it doesn't burn.
Add additional water 1 tbsp at a time as needed to prevent mixture from burning.
Cool and serve.
Notes
There is no need to add water if you're using frozen blueberries.
If, during the simmering time, the mixture seems a little dry, add 1 tablespoon of water at a time to keep your blueberry compote from burning.
Makes 3 cups.
