On a lightly floured surface, carefully unfold each sheet of puff pastry.
all-purpose flour
Using a floured rolling pin, gently roll out each sheet of pastry until it is about 14×10 inches.
Brush equal amounts of melted butter over both sheets of the puff pastry, leaving a small butter-less perimeter around the outside edges.
2 tbsp salted butter
Cover the butter on both sheets of pastry with equal amounts of brown sugar and top with cinnamon.
1/2 cup brown sugar, divided, 2 tbsp ground cinnamon, divided
Starting with the long edge of the puff pastry, fold each sheet in half.
Use a pizza cutter to cut 10-12 strips in each piece of puff pastry.
Gently stretch and twist the pieces of puff pastry and place them on the baking sheet.
Freeze for 30 minutes if possible.
Bake for 15-17 minutes or until cinnamon twists are browned.
Make the Frosting
While the cinnamon twists are baking, combine softened cream cheese and butter in a mixer fitted with a paddle attachment. Mix on medium until soft and fluffy.
4 oz cream cheese, 4 tbsp salted butter
Reduce the mixer to low and add the powdered sugar 1/4 cup at a time, tasting as you go.
1 cup powdered sugar
Add in the vanilla and slowly increase the mixer speed to medium until well combined.
1 tsp vanilla extract
Serve with warmed cinnamon twists.
Notes
When I stretch the puff pastry in step 10, each piece is about 8-10 inches long.
