Follow thawing times on the puff pastry box (anywhere from 20-120 minutes depending on the brand).
2 sheets puff pastry
Preheat oven to 400˚F.
On a lightly floured surface, unfold each sheet of puff pastry.

Using a floured rolling pin, gently roll out each sheet of pastry until it is about 12×10 inches.
Carefully transfer both sheets of pastry to a large baking sheet (~18x13 inches).
For pizza with heavy toppings (ex: tomatoes, sausage, etc.), blind-bake the pastry before adding toppings:1) Poke some holes in the dough with a fork before putting it in the oven. Bake at 400˚F for 8 minutes.2) Add sauce, cheese, and toppings and bake for an additional 5-10 minutes, or until the cheese is melted and lightly browned.
2 tbsp pizza sauce, 3 cups shredded mozzarella, toppings of your choice
For pizza with basic toppings:Cover the dough with sauce, cheese, and toppings, and bake it at 400˚F for 13-15 minutes.
Notes
Check the directions on the box of your puff pastry to confirm the thawing time. Some brands only recommend 20 minutes and others recommend up to 1+ hours.
Optional: brush the edges of the unbaked pastry with olive oil or melted butter, and sprinkle dried herbs and garlic powder over it prior to baking.
You do not need to put down cornmeal or parchment between the puff pastry dough and the baking sheet.
