Can You Use Puff Pastry Instead of Pizza Dough?

Absolutely! Puff pastry makes amazing pizza dough, AKA a pizza base. It’s light, flaky, and so buttery. Even better, it’s easy to keep a box in your freezer so homemade pizza is right at your fingertips.

INGREDIENTS AND VARIATIONS

  • Puff pastry – you can find it in the freezer section of the grocery store, usually near the frozen pies/desserts.
  • Pizza sauce – either store-bought or homemade. Check out this best homemade pizza sauce recipe, white pizza sauce, or get creative and use pesto. Check out our pesto without pinenuts recipe.
  • Mozzarella – shredded fresh is my preference because it melts beautifully. And while I suggest how much to use in the recipe card below, we all know that cheese should be measured with your heart.
  • Toppings – go wild and use your favorites. Any raw meat would need to be precooked before being put on the pizza.

How to Make Puff Pastry Pizza

*I’ll walk you through it here with some photos and tips, and you’ll also find a printable recipe card at the bottom of the post with exact measurements, etc. You can click “jump to recipe” to skip down.

Start by following the thawing times on the puff pastry box (anywhere from 20-120 minutes depending on the brand).

Preheat the oven to 400F. Then, lightly flour a clean surface and carefully unfold the thawed puff pastry. Using a floured rolling pin, I like to gently roll out the pastry until it is about 12×10 inches.

From here, you have two options. Option 1) parbake (AKA blind bake) the puff pastry before putting the toppings on. This is a great option if your toppings will be heavy and likely to release some water during the baking process. Things like fresh tomatoes or zucchini will “sweat” as they bake.

To blind-bake it, poke some holes in the dough with a fork before putting it in the oven. Bake at 400F for 8 minutes. Then, put your sauce and toppings on and bake for an additional 5-7 minutes, or until the cheese is melted and lightly browned.

Option 2) Throw everything on the dough and bake it at 400F for 13-15 minutes. This option works well when the toppings aren’t heavy and won’t cause the dough to get soggy as it bakes. When it’s something simple like just cheese and pepperoni, I skip the step of blind baking.

Why is My Puff Pastry Pizza Soggy?

If the toppings or sauce you use are very heavy or release water during the baking process, the puff pastry under the toppings will steam instead of bake.

To prevent this, you’ll want to parbake or blind-bake the puff pastry for 8 minutes at 400F before adding toppings.

Another culprit of soggy puff pastry is that the dough became too warm prior to baking. You want the puff pastry to thaw just enough to work with it, but not get so warm that the layers break down while baking, leading to a soggy mess.

If the dough gets warm during the rolling/topping process, place the unbaked puff pastry on a baking sheet and refrigerate it for 15-20 minutes prior to baking.

WHAT TO SERVE WITH Puff Pastry PIZZA

HOW TO STORE AND REHEAT

Storing Leftovers: Allow the pizza to fully cool before storing it in an air-tight container in the fridge for 2-3 days.

Reheating Leftovers: This pizza reheats amazingly well! Microwave it for 20-30 seconds, or at 340F for 2-6 minutes in an air fryer. You can read more details in our post on how to reheat pizza in an air fryer.

Freezing Leftovers: I do not recommend freezing this pizza.

PRO TIPS/RECIPE NOTES

  • Check the directions on the box of your puff pastry to confirm the thawing time. Some brands only recommend 20 minutes and others recommend up to 1+ hours.
  • Puff pastry does not “rise” like pizza or bread dough. Before it goes into the oven, it will look flat. As it bakes the pastry will “puff” up. It is a perfectly named product!
  • Optional: brush the edges of the unbaked pastry with olive oil, melted butter, or an egg wash, and sprinkle dried herbs and garlic powder over it prior to baking.
  • You do not need to put down cornmeal or parchment between the puff pastry dough and the baking sheet.
  • If you need to make this gluten-free, some popular gluten-free puff pastry brands are: Schar, Jus-Rol, Good Love Foods, and GeeFree.

  • 2 sheets puff pastry {from 1, 17 oz box}
  • all-purpose flour for working with the puff pastry
  • 2 tbsp pizza sauce
  • 3 cups shredded mozzarella
  • toppings of your choice

Instructions 

  • Follow thawing times on the puff pastry box (anywhere from 20-120 minutes depending on the brand).

  • Preheat oven to 400F.
  • On a lightly floured surface, unfold each sheet of puff pastry.

  • Carefully transfer both sheets of pastry to a large baking sheet (~18×13 inches).
  • For pizza with heavy toppings (ex: tomatoes, sausage, etc.), blind-bake the pastry before adding toppings:
    1) Poke some holes in the dough with a fork before putting it in the oven. Bake at 400F for 8 minutes.
    2) Add sauce, cheese, and toppings and bake for an additional 5-10 minutes, or until the cheese is melted and lightly browned.
    2 tbsp pizza sauce, 3 cups shredded mozzarella, toppings of your choice
  • For pizza with basic toppings:
    Cover the dough with sauce, cheese, and toppings, and bake it at 400F for 13-15 minutes.
