Instructions
Preheat oven to 375˚F.
Heat an oven-proof skillet over medium heat. Add the butter and onions. Cook down until the onions have softened.

1/4 cup onion
Add the cornstarch and whisk to combine with the onions. Cook, stirring often for ~3 minutes or until the mixture is light brown.

Slowly pour in the chicken broth and stir.
1 1/2 cups chicken stock
Add the tomato paste, Worcestershire sauce, garlic, and thyme. Increase the heat to medium-high and bring to a soft boil.

Cook, stirring often for 5 minutes or until sauce has thickened.
Add the peas and carrots and then the turkey. Stir to combine.

1 cup carrots,
3 cups turkey
Top with mashed potatoes and sprinkle with cheese.
2 cups mashed potatoes,
1 cup extra sharp cheddar
Bake for 25 minutes.
Notes
Using frozen veggies makes this dish even easier to throw together for a weeknight or simple dinner.
Cooked chicken would work great for this recipe as well.
