I’m obsessed with all things French onion flavored (hello there, French onion slow cooker chicken and Instant Pot French onion soup)…but don’t tell the other recipes, because this French onion pot roast is officially my favorite.

It has everything you love – deep onion flavor, incredibly tender pot roast, and ALL THE VEGGIES! If you’re like me and adore the carrots and potatoes in pot roast, this recipe is FOR YOU!

Ingredient Highlight

I used a chuck roast, but you can also use brisket, rump, or round roast. Rump can be a tougher cut of meat to cook compared with the others, but it will still be amazing.

I like to choose a cut that has decent fat marbling, as it will add more flavor to the dish. Trim some fat before cooking to keep the broth from getting greasy.

As an avowed mushroom hater, you’ll never see them added to my recipes. But if you’re a fan of the fungus, go ahead and add some with the carrots and potatoes. I mean, I guess. Do what you want. Gross.

Sarah’s Cheat Codes

  • Unless mushy veggies are your jam, I recommend you cut the carrots and potatoes into LARGE pieces. Even better, you’ll see that I used baby potatoes, so no cutting was involved. Huzzah!
  • Are you a gravy fan? Well, this recipe makes it easy to whip some up with the broth. About an hour before serving, combine 3 tbsp of cornstarch in a small bowl with 1/4 cup of broth from the slow cooker. Whisk really well and then stir the mixture back into the slow cooker. Cook on low until ready to serve.

Slow Cooker French Onion Pot Roast With Carrots and Potatoes

My cozy slow cooker French onion pot roast is a one-pot dinner that you’ll love to come home to. You’ll get juicy and tender pot roast with carrots and potatoes, flavored by aromatic onions and a delicious from-scratch broth. Thanks to the slow cooker, you can push a button, walk away, and have dinner waiting for you at the end of a long day.

Ingredients 

  • 2 lb chuck roast {or: rump, round, brisket}
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 tbsp salted butter
  • 4 1/2 cups sliced onions {white or yellow}
  • 4 cloves garlic {minced}
  • 4 cups carrots {peeled and cut into very large pieces}
  • 3 cups baby potatoes {whole}
  • 2 sprigs fresh thyme
  • 2 tbsp Worcestershire sauce
  • 1 bay leaf
  • 2 1/2 cups beef stock

Instructions 

  • In a medium-sized mixing bowl, sprinkle the chuck roast with salt and pepper.
    2 lb chuck roast, 1 tsp kosher salt, 1/2 tsp black pepper
  • In the bottom of the slow cooker, add butter, onions, garlic, and Worcestershire sauce.
    4 tbsp salted butter, 4 1/2 cups sliced onions, 4 cloves garlic, 2 tbsp Worcestershire sauce
  • Rest the meat on top of the sliced onions, and tuck carrots, potatoes, thyme, and bay leaf around the roast.
    4 cups carrots, 3 cups baby potatoes, 2 sprigs fresh thyme, 1 bay leaf
  • Add beef broth to the slow cooker.
    2 1/2 cups beef stock
  • Place the lid on the slow cooker and cook on low for 6-8 hours.
  • Discard the bay leaf before serving the pot roast.

Notes

Oven baking instructions – place in a dutch oven casserole dish and bake covered at 275˚F for 4-5 hours.
