These Chicken Gyro Instant Pot Sweet Potatoes are a healthy and gluten-free take on delicious gyros. And because we’re using the Instant Pot, they’ll be ready in a flash.

You guys, we’re cooking the chicken and the sweet potatoes together. In one pot! Get yourself a lotto ticket, because this is your lucky freaking day.

Why Cook Sweet Potatoes in the Instant Pot?

Because I said so! Actually, the Instant Pot takes less time than baking them in the oven, it doesn’t heat up your kitchen (bye bye boob sweat) and it uses less electricity. Hollah!

How Long Do You Cook Sweet Potatoes in the Instant Pot?

Anywhere from 12-20 minutes should do it depending on the size of the sweet potato. These Chicken Gyro Instant Pot Sweet Potatoes cook alongside the chicken at high pressure for 18 minutes.

How to Make Chicken Gyro Stuffed Sweet Potatoes

If you are new to pressure cooking and the Instant Pot, check out this post on recipes for Instant Pot beginners.

Place the wire rack/trivet in the Instant Pot and add water. Wad up a piece of foil and place it in on the trivet to divide the pot in half.

Scrub sweet potatoes and stack on one half of the foil (no need to poke holes. See recipe notes below). Add your chicken breast to the other half. Put the lid on, set to sealing. Manual>high pressure>18 minutes. Allow for a 10-minute natural release and then do a quick release to remove any additional pressure.

While the Instant Pot is doing its thang, mix up the ingredients for the Greek yogurt sauce (related: try making Instant Pot Yogurt).

Remove the chicken from the pot and shred. Add remaining herbs. Set aside.

Make a small top slice in the sweet potatoes that will create a pocket for the rest of the ingredients. Try your best to not cut it all the way through.

Layer: spinach, chicken, and then feta. Optional: put it under a low broiler on the second highest rack of your oven for 3 minutes. This makes the feta toasty and warm. Top with Greek yogurt sauce and serve.

Pro Tips/Recipe Notes

  • Try using homemade Cold Start Instant Pot Yogurt.
  • Make sure the sweet potatoes are not touching the water or it makes them mushy on the bottom. Ain’t nobody got time for that.
  • The cooking time for just one sweet potato is the same. Cooking time for a butt ton of sweet potatoes is the same as long as they are all similar in size.
  • No need to poke holes in the sweet potato prior to cooking in the Instant Pot. Sorry, you’ll need to find another way to get your aggression out.
  • Want to use Russet potatoes? Feel free but you do need to poke a few holes in those. Who knows why? #Science.
  •  You can freeze the cooked sweet potatoes for future meals. Freeze without the chicken, spinach, feta, and Greek yogurt sauce. Allow them to cool completely, wrap in foil and then place in a freezer bag. Defrost in the fridge overnight and microwave for 1 minute.
  • I used organic free-range chicken breasts from our monthly Butcher Box order. If you’re using super thick chicken breasts, slice them down the middle to decrease the thickness for even cooking.
  • To make this vegetarian, use cooked chickpeas instead of chicken.

Ingredients 

  • 1 lb chicken breast
  • 4 sweet potatoes
  • 1 cup water
  • 2 cups spinach chopped
  • 1/3 cup feta cheese

Oven Baking Directions

  • Preheat your oven to 375 degrees. Put one rack on the second highest setting. Place a large baking sheet covered with foil under the top rack. Scrub the sweet potatoes, pat dry, and pierce multiple times all over with a fork. Put 1 tbsp of olive oil and the kosher salt in a large bowl. 
  • Place two potatoes in the bowl, and swirl until the potatoes are covered with olive oil and salt. Place directly on the top rack. Repeat with the other two potatoes. Make sure the foil-lined baking sheet is completely covering the surface area directly under the spuds. Cook until a knife can easily pierce through, about 1 hour.
  • Meanwhile, simmer your chicken breasts in a pot of water on the stove until cooked through, about 25 minutes.
  • Mix the ingredients for the Greek yogurt sauce.
  • Make a small top slice in the sweet potatoes that will create a pocket for the rest of the ingredients. Try your best to not cut it all the way through.
  • Layer: spinach, chicken, and then feta. Optional: put it under a low broiler on the second highest rack of your oven for 3 minutes. This makes the feta toasty and warm. Top with Greek yogurt sauce and serve.

  1. Made this last night and it was a huge hit! I did the Instant Pot version and love that you only need one pot while things are cooking. I was a little hesitant throwing the sweet potatoes and chicken in there together, but they both cooked wonderfully. My hubs used bleu cheese crumbles on his (barf), but he loves it that way, I definitely prefer feta! The spinach really makes it a perfect meal.5 stars

  2. OK, you wore me down and I purchased an Instant Pot (6 quart). Holiday sales, coupons, and gift cards got me to a price I could live with.

    Made your tortilla soup first (yummers) and then made these chicken gyro/sweet potato thingys. My word, they are soooo good and of course fast. So for now since it’s properly winter here in Connecticut, I’ll be working my way though your soup options. I don’t recall how I found your site (back when it was at the OG ‘Frugal’ address.) but it’s been just amazing. Really enjoying it and your Instagram feed.     1. For me, it is about appearance. Whenever I cook chicken breast in the IP or slow cooker it gets weird almost foam-like stuff attached to it during the cooking process. I don’t want all that stuff on my sweet potato!

  3. I regularly stuff sweet potatoes with bbq pulled pork and a little cheese, it is hands down one of my favorite dinners. Also, on a night when I’m super busy I can just pop a sweet potato in the microwave for like 10 minutes and have a hot and filling dinner ready, it’s bomb.
