How to Make Strawberry Bark

Fill a saucepan with an inch of water and set a double-boiler inside. Melt dark/milk chocolate over medium heat. If you don’t have a double-boiler and need to use the microwave or a bowl, you’ll find detailed tempering directions in this post on Strawberry Truffles.

Once it has melted, pour over a baking sheet lined with parchment paper. Sprinkle with half of the crushed strawberries and then pop it in the freezer.

While the dark/milk chocolate is in the freezer, clean the double boiler and add white chocolate chips. White chocolate is a notoriously finicky item to melt. You don’t want to stir it constantly, or it becomes a pasty lump.

Pro tip: Wait until the white chocolate is super shiny on top, and then give it a few gentle stirs. Mine still had a few lumps in it because I was scared to over-stir. Let me tell you a secret. Lean in close. It all eats the same.

Pour the white chocolate over the frozen milk/dark chocolate. You may need to spread it a bit with a silicone spatula.

Sprinkle with the remainder of the strawberries and pop it back in the freezer for 30 minutes.

Break apart with your hands or cut into squares.

  • Wait until the white chocolate is super shiny on top, and then give it a few gentle stirs.
  • Pour the white chocolate over the frozen milk/dark chocolate. You may need to spread it a bit with a silicone spatula.
  • Sprinkle with the remainder of the strawberries, and pop it back in the freezer for 30 minutes.
  • Remove from the freezer, and with clean dry hands, start to break it into chunks.

Notes

Store in an air-tight container in the fridge. 
Do not use fresh strawberries as the juices will compromise the chocolate overtime.

  1. I made this when you featured it in Dec. 2019. It was beautiful and easy, but I have to admit I had some trouble getting the “brown” chocolate layer to stick to the white “chocolate” layer for some reason for some batches. Those freeze-dried strawberries are little chewy bits of goodness, gotta tell ya. I needed to make a lot of this, though, so I bought a big wonkin’ can and misjudged the amount. Because, 6 oz. is a can the size of my head. So now I have a huge amount of strawberries that I would like to bake with. It would be great if you could feature some recipes with fds for me to use them up in.5 stars
