One of the first stops I make when grocery shopping each week is the discount bin in our store’s organic section. Dented items, torn labels, and things that expire within a few months are marked down at least 50%. This week while shopping, I snagged two boxes of organic graham crackers for $1.69 each, all because the corner of each box was crinkled. For the love people.

With my “one sweet a day” rule, I was not about to waste it on a freaking graham cracker. But…what if I added some melted chocolate and marshmallows to those graham crackers? Would that be worth eating during my daily treat? I do believe the answer is “oh, hell yes”.

And just like that, s’mores bark was born.

For the marshmallow component, I figured ready-made marshmallows wouldn’t melt easily enough to mitigate the chewy factor. I guessed that store-bought marshmallow fluff would be spreadable, but the jar was so small and the ingredients so numerous.

I had already planned on making healthy marshmallows to add to our holiday goodie plates for the neighbors and figured that was my solution. Marshmallows without corn syrup straight from the stand mixer were still warm and easy to spread. #winwin and #TWSS

I have a very strict and regulated recipe testing process. I basically give anyone near me a few bites and force them to give me feedback. My sister thoughtfully mentioned that the flavor was great but it was hard to taste the components when it was cold. A few room temperature samples confirmed that this s’mores bark is best stored in the fridge, but served at room temp.

The organic discount bin is never boring to look through but rarely do I find something this awesome on clearance. Had someone not dented that little corner on two boxes, I never would have bought graham crackers. Had I never bought graham crackers, s’mores bark would never have been created.

Life is funny. And delicious.

S'mores bark is an easy bark with melty chocolate, soft marshmallows, and crispy graham crackers. Everything you love about s'mores without a campfire.



  • Line a baking sheet with parchment.
  • Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until completely smooth.
  • Spread melted chocolate on the parchment. It's really your preference for how thick or thin you make it.
  • Layer graham crackers on top of the chocolate.
  • Spread warmed marshmallow creme over the graham crackers. Sprinkle the top with a crushed graham cracker if so desired. 
  • Place in the fridge for at least two hours to cool completely. Break into pieces with your hands. Store in the fridge, but serve at room temperature.


You can also use regular marshmallows without it impacting the recipe. Use 1 bag (10.5 oz) and 1 scant tbsp of butter. Microwave on high for 30 seconds. Stir. And then microwave for another 30 seconds and stir.
If making homemade marshmallows for this recipe, have the chocolate and graham crackers already on the parchment at least halfway through marshmallow making process. You want to spread the homemade marshmallow creme as soon as it comes out of the mixer and is still warm and pliable.
Transfer the remainder of the marshmallow mixture to a butter and parchment-lined baking dish. Allow to sit out at room temperature for 12 hours.
