Anyone else a survivor of teenage pizza roll burn injuries? Apparently, those things were filled with lava…and regret.

The homemade version is so good, so easy, and even better, you can make and freeze them ahead of time. Boom! Snack genius. Thy name is YOU.

And while I use the air fryer (this is the model we have), I’ve also included skillet and oven baking instructions as well.

Recipe Ingredients

This recipe uses:

  • Egg roll wrappers
  • Shredded cheese
  • Red pizza sauce or try our white pizza sauce
  • A bit of olive oil
  • Additional toppings of your choice (pepperoni, sausage, veggies, etc.)

How to Make Air Fryer Pizza Rolls

I came up with this handy little step-by-step photo guide for you to learn to work with egg roll wrappers.

  1. Set up a “wrapping” station with pizza sauce, mozzarella, and any other mix-ins that you’d like, a plate, a small dish of water, and a pastry brush.
  2. Place the wrapper on a plate or cutting board. You’ll want it shaped like a diamond, with the bottom pointing toward you. Place 1 tsp of sauce, 2 tbsp of mozzarella, and a little bit of any other toppings in the bottom third of the wrapper.
  3. Roll up the bottom point of the diamond so that it goes up and over the filling, but only goes to the center of the wrapper.
  4. Fold in the left side of the wrapper to cover the center.
  5. Fold in the right side of the wrapper to cover the left fold. 
  6. Starting from the bottom, roll the egg roll wrapper up until just the top point of the wrapper is still exposed.
  7. Brush some water on the top point of the egg roll, and fold it down. You may need to brush a bit more water over the edges to “seal” the egg roll closed.
  8. Repeat until you have 4-5 egg rolls made. You can make more while the first batch is cooking.

How to Make Frozen Pizza Rolls in the Air Fryer

If making your own pizza rolls is not your jam, you can easily buy a bag of premade frozen pizza rolls from the grocery store.

To make air fryer frozen pizza rolls, preheat your air fryer to 370F for 3 minutes. Add pizza rolls in a single layer in the air fryer basket, and cook at 370F for 5-8 minutes, shaking the basket halfway through.


In most grocery stores, you’ll find egg roll wrappers in the produce section near bottled salad dressings and sauces. They’re super affordable at $2-3 for 20. If you have access to a great Asian market, you’ll find a much wider variety there.


  • I prefer to brush olive oil over the egg rolls rather than spray them. I find the wrappers bubble up more when sprayed.
  • You can use no oil at all if you’d like. They won’t be as crispy but they’ll still be tasty!
  • Any meat you’d like to add to your rolls must be cooked before going into the air fryer.
  • Do not over-stuff the wrappers or you’ll have a lot of cheese and sauce leaking out.
  • You can make these ahead of time. Keep unbaked egg rolls covered in the fridge for up to a day, or freeze them on a parchment-lined baking sheet and then transfer them to freezer storage (I used these Stasher bags). Brush frozen egg rolls with olive oil and then bake for the normal amount of time.
  • Try Homemade Sugar-Free Pizza Sauce, chopped Air Fryer Bacon, or Whole30 Breakfast Sausage for delicious rolls.

Storage Instructions

Allow any leftover pizza rolls to fully cool before storing them in an air-tight container in the fridge for 2-3 days.

These pizza rolls reheat amazingly well! Microwave them for 20-30 seconds, or at 340˚F for 2-3 minutes in the air fryer. You can read more details in our post on how to reheat pizza in an air fryer.

Air Fryer Pizza Rolls Recipe

Ditch the store-bought frozen snacks and make your own homemade pizza rolls at home! Baked, not fried, these air fryer pizza rolls are ready in only 8 minutes and can be frozen for a quick snack.



  • 20 egg roll wrappers
  • 1/3 cup pizza sauce
  • 2 1/2 cups shredded mozzarella
  • 2 tsp olive oil
  • additional toppings of your choice


  • Add ~1 tsp pizza sauce, ~2 tbsp mozzarella, and ~1 tsp of additional toppings to the bottom third of the egg roll wrapper.
    1/3 cup pizza sauce, 2 1/2 cups shredded mozzarella, additional toppings of your choice, 20 egg roll wrappers
  • Assemble the rolls (see the step-by-step photos in the post). Brush olive oil over the top of the egg rolls.
    2 tsp olive oil
  • Brush olive oil on the basket of the air fryer. Place the egg rolls in the basket, seam side down, without letting them touch each other.
    2 tsp olive oil
  • Bake at 360F for 6 minutes. Flip and bake for an additional 2 minutes.


  1. All meats must be cooked before being put into the air fryer.
  2. You can use no oil if desired. They won’t be as crispy but they’ll still be tasty.
  3. To freeze: place uncooked egg rolls on a baking sheet lined with parchment paper, and freeze.  Then transfer to a freezer-proof bag or container. Do not thaw before cooking. 
Skillet Instructions
  1. Heat a cast-iron skillet over medium heat for about 5 minutes.  Then add enough olive or avocado oil to cover the bottom of the skillet. Place the egg roll “seam side” down in the oil.
  2. Cook it until that side is crispy and brown, and then flip.  When finished cooking, place them on a plate lined with newspaper or paper towels to absorb the extra oil.
Baking Instructions
  1. Place a baking rack on a foil-lined baking sheet. Liberally spray the rack with olive oil.
  2. Put the egg rolls seam side down on the baking rack and brush olive oil over the top.
  3. Bake at 325 F for 12 minutes, and flip. Bake for an additional 8-12 minutes or until the egg rolls are nice and crispy without being burned.

Just wanted to share I made these now two times and both times it was wonderful, once I did it with a friend at her house and we gobbled them up real quick and yesterday I made them at home and again my husband gobbled them up and I gobbled up the rest that I hid and didn’t tell him I made.   2. These were delish! I made them in my AirFry Oven ~ it’s better b/c You can watch (& smell) the cooking.
    They took 6 mins ~ flip to fold up 2 mins ~ flip back to fold down till golden
    Keeping the sauce & cheese to a minimum is definitely the key.5 stars

  3. Made these tonight and they were wonderful. They crisped up perfectly. The only change was due to how my air fryer operates.  I cooked them for 7 minutes and my machine tells me to flip at the half way mark. 5 stars

  4. These sound amazing!  Wondering if you think they might work with wonton wrappers in place of egg roll?  I would like them a bit smaller for our purpose and also would like the thinner wrapper. I realize you have likely not tried it so I understand your reply may well be an educated guess :-).  Thanks!

    1. Theoretically, they should. BUT, I feel like they would be VERY hard to roll because the wrappers are so much smaller. Are you thinking about making them “wonton” size and folding them more like a dumpling?

      1. That’s a good point…hadn’t thought about that! My thought was just a smaller egg roll type shape if you will…perhaps I will buy both wrappers and have the egg roll ones as a back up if my clumsy fingers can’t deal with smaller ones!  LOL!  Thanks much for the quick reply…if I do try the wonton, will let you know how it worked (or didn’t!).

      3. I made these in the oven for years until I got my air fryer.  These are so much better and crisper. I use half a mozzarella string cheese and it works great.  Every fryer is different. May need a higher heat on some. I use the air fryer setting instead of the bake. They freeze really well after cooking and heat up from frozen great.  The olive oil brushing on the outside (lightly) was a great suggestion. 5 stars

  5. Fun to make and delicious! My picky eater loves them and the freeze well and from frozen can be easily cooked in the air fryer at 390 degrees for 7 minutes.5 stars

  6. these certainly were a great idea and look delicious in the picture provided! unfortunately mine did not turn out like that at all. I brushed my egg roll wraps with olive oil and pulled them out and they were still soft in the middle and pale. only a little crunch on the edges and the seem. so I decided to spray the already cooked ones with olive oil and pop them back in for another 3 minutes. they did get more crispy, but they didn’t brown up like the picture provided. not sure what I did wrong. seemed like a fool-proof recipe, but I guess not! they still tasted mostly alright though. just a little doughy in some spots haha3 stars

    1. Taylor, we’ve made them many times and have not had that experience. So, let’s troubleshoot! Are you using an oven or basket-style air fryer? Air fryers, like ovens in our homes, may all differ slightly in terms of cooking temps. It sounds like yours might run a little low for heating or just need more time for certain foods.

  7. These were so good! I used half a frozen mozzarella stick in each and it was perfect!  Although shredded mozzarella is probably cheaper.  I’ll bet it would be good with slices too (which I have a ton of).. Thank you so much! These may replace delivery on pizza night!

  8. They were delicious. Unfortunately, I’m fairly new to our air fryer and couldn’t get these to really get crisp???? I’m sure if I could figure that part out, they’d be able phenomenal. 

    1. Jordan, did you use olive oil or oil of any kind? If you put them in without oil they will not crisp up very well.

        Yes???? we used olive oil. Some of them didn’t crisp at all, others half way crisped. But none of them would crisp all the way. I’m not sure why

  9. This was amazing! I used the air fryer version of the recipe and my family destroyed them last night! I used the homemade pizza sauce recipe too (which was also utilized as the dipping sauce), and I went one step further and made the egg roll wrappers from scratch using this recipe:

    I still need to work on getting the wrappers thin enough, but I used some bulk pork sausage as the topping and OMG….delicious. I have already been asked to make some more today…:-) Thank you!5 stars
