VARIATIONS

  • Like a sweeter version? Prior to cooking, add 2 tbsp of maple syrup, 1/2 tsp of cinnamon, and a pinch of cayenne pepper.
  • Add other root veggies like air fryer brussels sprouts, parsnips, turnips, onions, and air fryer roasted beets for an amazing ginormous roasted veg extravaganza.

PRO TIPS/RECIPE NOTES

  • Do your best to cut the sweet potatoes into uniform pieces to ensure even cooking.
  • If you’d like the sweet potatoes to cook faster, cut the pieces small, almost diced. Check after 10 minutes of cooking.
  • You can cut the cubed sweet potatoes ahead of time as part of your easy meal prep. Place in an air-tight container for up to 48 hours. Some brown spots might appear at the cut site, but they won’t impact the taste.
  • To reheat, pop them back into the air fryer for 5 minutes at 400˚F.
  • Every person prefers their veggies roasted to a specific level. Use common sense and check on the sweet potatoes during the cooking process to see what works best for you.
