Everyone loves a speedy and healthy side dish and these air fryer roasted sweet potato cubes are no exception! Ready in a flash and easily adaptable to each person’s preference, this is one of those dishes you’ll find yourself making again and again.

VARIATIONS

  • Like a sweeter version? Prior to cooking, add 2 tbsp of maple syrup, 1/2 tsp of cinnamon, and a pinch of cayenne pepper. 
  • Add other root veggies like air fryer brussels sprouts, parsnips, turnips, onion, and air fryer roasted beets for an amazing ginormous roasted veg extravaganza.

What TO SERVE With Sweet Potato Cubes

I like to use it as a side for my dry brined chickenpaleo salmon cakes, or air fryer chicken tenders with no breading.

And we love to top it with Sweet Potato Fries Dipping Sauce, Homemade Tartar SauceChipotle Sauce, or Homemade Cilantro Chimichurri.

PRO TIPS/RECIPE NOTES

  • Do your best to cut the sweet potatoes into uniform pieces to ensure even cooking.
  • If you’d like the sweet potatoes to cook faster, cut the pieces small; almost diced. Check after 10 minutes of cooking.
  • You can cut the cubed sweet potatoes ahead of time as part of your easy healthy meal prep. Place in an air-tight container for up to 48 hours. Some brown spots might appear at the cut site, but it won’t impact the taste.
  • To reheat, pop them back into the air fryer for 5 minutes at 400F degrees.
  • Every person prefers their veggies roasted to a specific level. Use common sense and check on the sweet potatoes during the cooking process to see what works best for you.

Air Fryer Sweet Potato Cubes

Ingredients 

  • 4 cups cubed sweet potatoes {peeled}
  • 2 tsp olive oil
  • 1 clove garlic {minced}
  • 1/8 tsp flaky sea salt

Instructions 

  • Preheat air fryer at 380F for 3 minutes.
  • In a medium mixing bowl, drizzle sweet potato cubes with olive oil. Add minced garlic. Gently stir to coat.
    4 cups cubed sweet potatoes, 2 tsp olive oil, 1 clove garlic
  • Brush the air fryer basket with olive oil and add sweet potato cubes.
  • Bake for 12 minutes at 380 degrees F.
  • Shake the basket and cook for another 2-4 minutes, depending on how crispy you like your roasted sweet potatoes.
  • Sprinkle with flaky salt.
    1/8 tsp flaky sea salt
