These loaded buffalo chicken fries are a delicious anytime snack, appetizer, or quick dinner.

Use your favorite frozen (or homemade) fries, leftover chicken or snag a rotisserie chicken from the grocery store, and bottled buffalo sauce for a lightning-fast weeknight meal.

Sustainability Tip

If you have leftover buffalo sauce, don’t let it go bad in your fridge.

Use it to make batches of buffalo chicken thighs, buffalo chicken casserole, or Greek yogurt buffalo chicken dip.

Or freeze in 2 tbsp portions. I love these Souper Cubes for freezing small quantities of sauces.

Making The chicken

I’m sharing how I make shredded chicken in my Instant Pot, but you could also use leftovers from your own homemade roasted chicken, or even a grocery store rotisserie. And if you don’t eat meat, just leave it off. You’re still going to LOVE these buffalo fries!

Place chicken in the Instant Pot insert and add 3 cups of chicken broth or water.

Lock the lid into place and set the steam release handle (valve on top) to “Sealing”. Press Poultry>High Pressure>12 minutes. 

Allow for a 10-minute natural release and then perform a quick release. Remove the chicken transfer it to a bowl and shred with two forks.

Pro Tips/Recipe Notes

  • This can be a meal prep dream! Mix the sauce and shredded chicken ahead of time and store in the fridge for up to 4 days. Heat and serve it over the hot fries.
  • If you eat dairy, adding a bit of shredded mozzarella cheese to the top of the hot fries would be amazing! Oh oh, and top with some bleu cheese crumbles!
  • Try waffle fries for more of a buffalo chicken nacho situation. Dibs on “buffalo chicken nacho situation” as a band name.

Buffalo Chicken Fries

A quick and easy recipe, these buffalo chicken fries are a real crowd-pleaser! Loaded buffalo fries are oven-baked and topped with delicious shredded buffalo chicken and other tasty toppings.

Ingredients 

  • 1.5 lbs french fries
  • 3 cups shredded chicken breast {1 lb chicken breast}
  • 1/3 cup buffalo sauce {I used Frank's Red Hot}

Optional Toppings

  • sliced green onions
  • ranch
  • cilantro
  • sliced jalapeños
  • bleu cheese crumbles

Instructions 

  • If using storebought fries, bake according to directions on the package.
    1.5 lbs french fries
  • Combine cooked shredded chicken breast and buffalo sauce until the chicken is thoroughly mixed with the sauce.
    3 cups shredded chicken breast, 1/3 cup buffalo sauce
  • Add sauced chicken to your crispy fries and top with sliced green onions, ranch, cilantro, sliced jalapenos, or whatever else your pretty heart desires.
