For the bulk of my childhood, my parents made a version of this garlic and lemon chicken marinade. But instead of fresh herbs, it used dried ones and always lacked a special something something.

My version takes advantage of fresh basil and oregano, and the addition of lemon punches everything into the next level of YUM!

My favorite way to use this marinade is with our sheet pan chicken thighs and potatoes. It’s a perfect and delicious no-fuss one-pan kind of meal!

I’m the meal prep queen (I mean, I wrote a whole book about it!), and will prep a batch of this recipe up to two days before I need to use it. I store it in a mason jar with a lid to keep the garlic smell out of my fridge.

When I make this marinade in bulk, I like to pulse the herbs and garlic in my trusty food processor. It makes quick work of the chopping and makes the recipe prep even easier.

Quick and Easy Garlic and Lemon Chicken Marinade

This amazingly easy garlic and lemon chicken marinade will transform your favorite cuts of chicken (or veggies!) for the grill, oven, or air fryer. Made with vibrant fresh herbs and an added punch of fresh lemon, this will become your go-to quick marinade for tasty homemade dinners!

Ingredients 

  • 1/3 cup olive oil
  • 1/3 cup lemon juice {fresh preferred}
  • 3 cloves garlic {minced}
  • 3 tbsp oregano {fresh, chopped}
  • 3 tbsp basil {fresh, chopped}

Instructions 

  • Combine olive oil, lemon juice, garlic, and herbs in a deep bowl.
    1/3 cup olive oil, 1/3 cup lemon juice, 3 tbsp oregano, 3 cloves garlic, 3 tbsp basil
  • Add chicken and toss to coat. Marinate for at least 30 minutes or up to 36 hours. 

Notes

  • If you use dried herbs instead of fresh ones, reduce the amounts by one-third.
