Raise your hand if you’ve ever made yourself sick by eating too much soup directly from the Instant Pot.

Anyone? Anyone? Bueller?

As soon as I took the lid of this soup I knew it was a freaking winner. But the real test was having my husband try it. He’s not picky, but also isn’t a soup fan (unless it is Dairy-Free Chicken and Gnocchi Soup).

We both LOVED this chicken pot pie soup and then we promptly each ate way too much of it. That’s what passes for date night around these parts.

Soup is pretty much my favorite thing. Whole30 soups are so delicious, comforting, and healthy that I actually put together a guide on 15 Whole30 Soups to keep you warm and cozy.

What Is In Paleo Chicken Pot Pie Soup?

Despite what you may be thinking, you don’t just take a whole chicken pot pie and mush it up. I know, disappointing because that sounds super easy.

The beauty of this soup is that you just dump it all into the Instant Pot or slow cooker. There is no need to saute, no separate cooking of things; nothing. Dump, press some buttons and cook this deliciousness.

This awesome soup is packed with chicken breast, carrots, onion, celery, garlic, chicken stock (try homemade chicken bone broth), potatoes (I used russets), and (frozen) green beans. The broth is made extra creamy by a splash of original Nut Pods or your favorite milk of choice.

The amount of vegetables called for may seem excessive, but soup is the best and easiest opportunity to go crazy on adding more healthy veg into your diet. All those yummy veggies make this chicken pot pie soup hearty, nourishing, and deeeee-licious.

If you don’t want to make your own homemade bone broth, check out this post on where to buy bone broth. In a very dorky move on my part, I’ve created a free download where you can compare protein and sodium content as well as the price per ounce for various brands. #nerdalert

ERRR, WHAT ARE NUT PODS AND WHY IS THE NAME SO HILARIOUSLY AWESOME?

Nut Pods are a dairy-free, Whole30 approved substitute for coffee creamer, half-and-half, and cream. They’re pretty freaking delicious and work awesome for dairy-free cooking.

For this recipe, you’ll want the original flavor. If you’re unable to find them locally, Amazon carries them. You can also use a substitution of half coconut cream and half almond milk in place of the Nut Pods.

Also? I just like saying Nut Pods.

Where Do You Get Affordable Organic Free-Range Chicken?

I’m blessed that we have a local butcher for buying organic meat, but we also have a monthly Butcher Box subscription. Butcher Box sources only organic and free-range meat for their customers and ships them to your home once a month.

The meat is super high-quality and we’ve always had an amazing selection sent each month. In addition to what they pick for you, you’re able to add specific cuts and types of meat to your box. Even with our local source, we still look forward to our monthly Butcher Box delivery.

Can I Freeze Paleo Chicken Pot Pie Soup?

You sure can! My preferred method for freezing soup is using quart and pint wide-mouth canning jars. Pints are perfect for a single grab and go meal, and two quarts will feed our family for a full dinner.

Here’s How to Make It

*Detailed and printable recipe card at the bottom of the post (including slow cooker instructions).

Add all the veg, except the green beans to your Instant Pot.

In a separate bowl mix the arrowroot with the chicken and then dump that into the Instant Pot too.

An instant pot full of vegetables and a bowl of chicken breasts.

A picture of raw chicken – you’re welcome!

Add in the dry seasonings, and pour the chicken stock over everything. Pro tip: the liquid will NOT cover all the veg and chicken. It’s going to be ok; just trust me on this! Make sure the vent is set to “sealing” and then press manual>high pressure>6 minutes.

Two steps in the process for making chicken pot pie soup

When the Instant Pot beeps, use a clean kitchen towel and flip the vent to “venting” (this is called a quick release). When the vent drops, open the lid, add in the Nut Pods/milk, and the frozen green beans. Stir and put the lid back on for 2 minutes (no need to switch the vent or anything).

Pro Tips/Recipe Notes

  • This soup definitely thickens up as it sits and becomes more stew-like the next day. If you want your soup brothy, either reheat with a bit of broth or just simply add more during the initial cooking process.
  • If you’re not on a Whole30 round or don’t eat paleo, you can use cornstarch in place of the arrowroot and frozen peas in place of the green beans.

  1. I just made this and ate two bowls! And I live by myself, so I have leftovers to last me through the weekend! Looking through the comments, I’m going to try throwing in some turmeric next time – that sounds awesome too. This went together really quick – the only bad part (for me) was dicing raw chicken (because raw chicken grosses me out). This is so good, and so easy. Thank you for helping me cook!!

    • Leftover soup is the BEST soup!!

Ok, so I hate cutting up raw chicken too. HATE it. A “fun” hack would be to put the chicken in a separate bowl and chop it with kitchen shears. It works really well and the hand to chicken contact is almost zilch.
