Paleo Chicken Pot Pie Soup {Whole30, GF, DF}

As soon as I took the lid of this soup I knew it was a freaking winner. But the real test was having my husband try it. He’s not picky, but also isn’t a soup fan (unless it is Chicken Gnocchi Soup).

We both LOVED this chicken pot pie soup and then we promptly each ate way too much of it. That’s what passes for date night around these parts.

What Is In Paleo Chicken Pot Pie Soup?

Despite what you may be thinking, you don’t just take a whole chicken pot pie and mush it up. I know, disappointing because that sounds super easy.

The beauty of this soup is that you just dump it all into the Instant Pot or slow cooker. There is no need to saute, no separate cooking of things; nothing. Dump, press some buttons and cook this deliciousness.

This awesome soup is packed with chicken breast, carrots, onion, celery, garlic, chicken stock (try homemade chicken bone broth), potatoes (I used russets), and (frozen) peas. The broth is made extra creamy by a splash of original Nut Pods or your favorite milk of choice.

The amount of vegetables called for may seem excessive, but soup is the best and easiest opportunity to go crazy on adding more healthy veg into your diet. All those yummy veggies make this chicken pot pie soup hearty, nourishing, and deeeee-licious.

ERRR, WHAT ARE NUT PODS AND WHY IS THE NAME SO HILARIOUSLY AWESOME?

Nut Pods are a dairy-free, Whole30 approved substitute for coffee creamer, half-and-half, and cream. They’re pretty freaking delicious and work awesome for dairy-free cooking.

For this recipe, you’ll want the original flavor. If you’re unable to find them locally, Amazon carries them. You can also use a substitution of half coconut cream and half almond milk in place of the Nut Pods.

Also? I just like saying Nut Pods.

Is This Chicken Pot Pie Soup Whole30 Compliant or Paleo?

Yes except for just one wee little ingredient – the frozen peas. Legumes are a big fat no no for Whole30 and paleo for some odd reason. Peas are freaking delicious y’all.

But, if you want to be totally on the level, sub in some frozen or fresh green beans.

Can I Freeze Paleo Chicken Pot Pie Soup?

You sure can! My preferred method for freezing soup is using quart and pint wide-mouth canning jars. Pints are perfect for a single grab and go meal, and two quarts will feed our family for a full dinner.

Here’s How to Make It

Add all the veg, except the peas to your Instant Pot.

In a separate bowl mix the arrowroot with the chicken and then dump that into the Instant Pot too.

Add in the dry seasonings, and pour the chicken stock over everything. Pro tip: the liquid will NOT cover all the veg and chicken. It’s going to be ok; just trust me on this! Make sure the vent is set to “sealing” and then press manual>high pressure>8 minutes.

Two steps in the process for making chicken pot pie soup

When the Instant Pot beeps, use a clean kitchen towel and flip the vent to “venting” (this is called a quick release). When the vent drops, open the lid, add in the Nut Pods/milk, and the frozen peas. Stir and put the lid back on for 2 minutes (no need to switch the vent or anything).

Pro Tips/Recipe Notes

  • This soup definitely thickens up as it sits and becomes more stew-like the next day. If you want your soup brothy, either reheat with a bit of broth or just simply add more during the initial cooking process.
  • If you’re not on a Whole30 round or don’t eat paleo, you can use cornstarch in place of the arrowroot.

  • 4 cups carrots chopped

  4. When everything is cooked, add in the Nut Pods/milk and frozen peas. Put the lid back on and cook for another 15 minutes.

  1. This soup needs to happen at my house this week. It sounds amazing (and easy, which I like a lot). A trick I’ve started using is to blend up some mixed power greens with the liquid and add that to the soup/rice water/whatever-meal-I’m-making-that-requires-liquid.

  2. We made this tonight and it’s fantastic!!  And so easy.  We added turmeric and lots of pepper – amazing.  Thanks for this, will be on regular rotation!

  3. I’m going to start this review by saying that my 8 and 9 year olds were actually sad when we ran out of leftovers. This was so good, it’s going into heavy rotation. I used cornstarch and almond milk and the results were fantastic! Thank you Sarah for an easy and tasty weeknight meal!

  4. Wow!  The celery seed is a spectacular addition.  This is really good, my almost 2 year old enjoyed it as well.  

  5. What is a nut pod? You say a cup of milk, but by the looks of the pictures it doesn’t look to be creamy?

    • Hi Lily, more info about Nut Pods is linked in the post. Basically, it is a Whole30 approved coffee creamer that has the consistency of something slightly thicker than half and half. It only calls for 1 cup so it isn’t overly creamy but still has a great creamy base.

      The recipe calls for 1 cup of Nut Pods or milk of choice, so if you’re unable to find Nut Pods, feel free to use whatever works best for you.
