What is Lavender Syrup Used For?
Much like the Honey Simple Syrup we use in our Mojito Mocktail, this lavender version has so many uses.
Use it instead of rose water in this Rose Lemonade or in a London Fog Latte. You can even add it to this Blended Iced Coffee for a homemade lavender latte.
Keep a jar on hand and add it to Healthy Tea Popsicles, Instant Pot Iced Tea, or Healthy Sweet Tea for a perfect flavor. It’s also delicious just mixed with plain sparkling water.
Ingredients & Variations
You only need three simple ingredients for this recipe – sugar, water, and lavender. You can use white or raw sugar, just keep in mind that the darker color of the raw sugar will result in a syrup that is darker/browner.
For the lavender, you can use fresh or dried culinary lavender. Only use lavender that you know has not been treated with chemicals; I would avoid using fresh flowers from the grocery store or a florist’s.
If using fresh, look for closed blossoms. The color of the lavender you’re using will dictate the color of the finished syrup.
Why is My Lavender Syrup Bitter?
Lavender that is not suitable for culinary purposes can give off a bitter and/or “soapy” taste. Any stems included in the heating process can also add to a bitter flavor.
When buying dried lavender, look for types that are marked “food safe” or “culinary”. I used this brand. Use any leftover dried flowers for making Rice Heating Pads for gifts or home use.
Pro Tips/Recipe Notes
- Your simple syrup will last for up to three weeks in the fridge. Do not store at room temperature.
- Freeze excess lavender syrup so that you always have some on hand. Use ice cube trays or small Souper Cubes and transfer frozen cubes to a freezer bag (reusable if possible).
- To use: start with 1-2 tsp per serving and adjust to taste.
Lavender Simple Syrup
Ingredients
- 2 cups water
- 2.5 tbsp culinary lavender {fresh or dried}
- 1 cup sugar
Instructions
- Combine water and lavender in a saucepan.2 cups water, 2.5 tbsp culinary lavender
- Bring to a boil and keep at a rolling boil for 1 minute, stirring often.
- Reduce to a simmer and cook on low for 20-25 minutes.
- Place a fine-mesh strainer over a bowl and pour the lavender water through the strainer.
- Pour the strained liquid back into the pan and add sugar. Cook on low until sugar has dissolved.
- Cool slightly, taste, and add more sugar if you prefer a sweeter flavor.1 cup sugar
Notes
